Hello there and welcome to Vegan Beckles, a Liverpool based blog about living gluten free and vegan.
I am a vegan wife and hamster owner! I’ve been vegetarian for over a decade, vegan for around half that and gluten free for a few years. I began my transition at 14 years old by giving up meat and becoming a pescetarian. I hated both the flavour and texture of meat and I’ve always been an animal lover so it was a combination of things that led me to pescetarianism. To begin with I didn’t give up fish due to the misconceptions about the lack of food choices available to vegetarians. I finally gave up fish a few years later after a pretty nasty food poisoning incident that was just the push I needed to go full vegetarian. Apart from a short period of time while I was at university, I have been vegetarian ever since.
When I was around 16 years old I had a lot of stomach problems and went on an elimination diet to find out if certain foods could be causing the pain. After giving up dairy I immediately felt much better. Although I still had no idea about the moral implications of eating dairy, I had no choice but to cut it out of my diet. This was a huge step towards me becoming vegan and after some research I decided to take the plunge and give up eggs too. Last year I was diagnosed with a gluten intolerance and it has taken me a long time to change my diet for the better. I now try to focus on a mostly whole foods diet which does wonders for my health.
My journey to gluten free veganism has been a long and, at times, difficult one but I wouldn’t change it for the world. I feel healthier than I ever have done and the variety of food I eat has increased more than I could ever imagine. Although I am a lot more confident in the kitchen than I used to be, I’m still on a steep learning curve! I’m constantly looking out for new recipes to use and new products to try.
This blog documents my vegan and gluten free journey. I will be reviewing gluten free, vegan products which are currently available in the UK as well as sharing tips and recipes I’ve tried. I’d love for you to join me on my journey! Welcome to my blog, kick off your shoes and stay a while. Leave a comment and you’ll make my day.
