Late again, sorry everyone! Was anybody else terrified by today’s quiche challenge? I considered skipping it but then I thought about the quiche recipes I had pinned to my Pinterest board and never dared to try. So here I am with my vegan and gluten-free quiche! I also avoid tofu so this quiche is chickpea based instead.
I settled on a recipe from The Vegan Household which was vegan and did not use tofu in the filling. I then had the challenge of finding a gluten-free pastry case to put my quiche in and chose this one from Healthier Steps. I have never had success with homemade gluten-free pastry and this was only a slight exception. I don’t know if it was due to the type of flour I used or my method but my pastry came out quite pale and dry. The quiche filling though came out really nicely! I used broccoli instead of the cauliflower suggested in the original recipe and also added mushrooms. My veg filling looked amazing in the pan before even adding it to the quiche mixture.
Apart from the different fillings I followed the recipe to the letter and was rewarded with a really good quiche to take to work for lunch! I enjoyed my quiche cold as I used to with the none vegan variety. Due to the pastry mishap, I think I might try this mixture in a muffin tray to make some nice mini crustless quiches! I’ll let you know how that goes.
