Broad beans (or fava beans) are an excellent food to include in your diet as they are high in fibre, protein, folates, vitamin B6 and iron. They are an ingredient that I’ve always had trouble with though as I could never stand the texture of them. This means the huge number of beans we get in the summer often go to waste.
This Broad Bean and Potato soup was from the Covent Garden A Soup for Everyday cookbook. It was a thick, wintery soup and the perfect way to use up the broad beans from my vegetable box as the texture was no longer an issue! I’m planning to try other broad bean soup recipes in the future so I can make the most of the summer crop.
